Potassium in Vegan Diet

I have been following the vegan diet now for 2 months. I am almost there. I love my eggs and have been eating egg whites mostly because I just don't want to give them up. Struggling with giving up fish but I am working on it. I had a doctor's appt this week and my potassium level which normally runs on the high side was a 6. I had to go to the ER for medication to bring my potassium level down. Turns out that by the time I got to the ER, had an EKG and another blood test the level went down to 5.1. So no need to take the medication. Home I go. Then a light bulb went off. I love the Life Light veggie sausages and the processed no meat baloney. The processed soy products all have potassium in them! My question, why do these items have potassium in them? I want my veggie sausages and I am so disappointed that I have to remove these items from my diet. What am I going to have for lunch? Sorry for the long message. I would love to hear if anybody else experienced this and what foods they switched to. Thanks. Suzy-Q
