HOW DID I SCREW THIS UP???

OK - so I made the pickles the other day.... cut up some radishes and put them in a glass jar with 1/2 a cup of the ume vinegar and 1 cup o water... and I left them to sit out with a cloth rubber banded over the top of the jar... and they friggin had mold on them 2 days later when I went to put them in the fridge!!


WTF!!! Exactly what did I do wrong to screw up the most simple recipe in the book exactly....?

yikes :S Were they fully submerged, kept out of the sun, in a cool dry place? Also important to make sure the jar or other things you used to put the veggies inside were not contaminated.

Ya... I dont know what happened! I had them fully submereged in a cool cuboard for 2 nights i believe... and they were rotten... my man smelt them and they smelled like rancid food... ahhh!! i guess just try again right...? lol

Ash-Lee, you should definitely try again. My grandmother and I make a lot of pickles together and it is not very uncommon to have a moldy one every so often. It's usually container contamination I think, but also if you use too much salt (doesn't sound like your problem though) I've never tried making pickles using water.... Was it filtered or boiled before you used it? I hope it works for you the second time. Also just a side note, I have always been told that if you are doing a "quick pickle" it should be refrigerated after 1 day, don't know if that would make a difference or not.

I would try putting them somewhere that is still cool and dark, but that has more airflow, instead of the cupboard.
