I am about 4 weeks from my due date and am very lucky to only have to work for one more week before my maternity leave begins. Recently I have been thinking about preparing some dishes to freeze during this time off before Baby comes. Then my husband and I can just reheat some delicious and healthy food when we have little time to prepare anything after the baby's birth. Any suggestions on what you have had success freezing?
That recipe includes animal products, but you can easily make it using vegetable stock rather than chicken stock, and eliminate the meat and add a meat alt or beans or tofu. I will eventually replace that old posting with a vegan version, but for now, it can give a good guideline for freezer meals.
Also, other dishes I have successfully frozen are shepherd's pie, mac n "cheese", and chilli.
