Need Help with Toasting Seeds-

I've tried oven roasting and pan toasting seeds. Both times they come out squishy and gross instead of crunchy and edible. What am I doing wrong?

Weird! What kind of seeds specifically are you trying? And you're just using a dry pan (no oil or anything, right?)? I usually toast nuts/sesame/pumpkin/etc seeds in a dry cast-iron skillet on the stove top, because if I put them in the oven I am likely to forget about them and burn them. They always come out fine - I do a medium heat, shake them around a bit to get them more evenly brown - maybe 10 mins is all it usually takes.

I tried pumpkin and squash but no, I wasn't using a dry pan. I thought I had to use a little olive oil so my spice would stick. I'll try them with the dry skillet and see if that doesn't fix it. LOL at forgetting them in the oven-I do that too. Thanks for the tip!

Ah - if you're putting spices/salt/etc. on them what I usually do is toast them like I said above, so they are good and dry and starting to brown, then add a little oil and the spices and heat a while longer. That way they stay crisp AND the spices can stick.

I agree with Starflower.


Also, if you're not already, use an atomizer/spray bottle to spray on the oil. That way, you use less oil and avoid overcoating.
