I also really like a version of Alicia's rustic pasta where I grate loads of veggies (carrot, zucchini, onion, greens etc) and mash up tofu in with the sauce. The extra protein and veggie hit is great! :) Also, try a veggie pizza: refried beans, grilled veggies, your fav sauce on top. Minestrone is also a great vegan meal/soup with some crusty bread on the side. Ratatouille is yum, bolognaise with lentils instead of meat, potato, onion and tomato layer bake (seasoned with: onions, garlic, tarragon, olive oil, salt and pepper), shepherds pie (lentil tomato sauce, topped with mashed sweet potatoes and some nutritional yeast, finished in the oven).

Cucumber Limenade or Lemonade (or Margarita MIX!!)


4-6 ripe limes (green turning yellow)


2 (organic if peel on) cucumbers (peeled and cut in large pieces)


Agave nectar, amber works best (or Stevia)


In Vitamix container (48 onz) squeeze in 6 large limes, add the cucumbers and water. Turn on the Vita Mix slowly increasing speed until cucumbers are send to heaven (lol).. then slowly reduce to 1/4 speed, carefully open the lid and add the agave nectar to taste. Ice can also be added and crushed with the blender.


For lemonade replace limes with lemons.. duh


For Margaritas... humm... yes, this is still vegan. lol Use 6-8onz less water, 2 more limes and twice the agave nectar. Also, add a pinch of raw/sea salt and of course 6-8oz of premium tequila (1800 silver highly recommended)


I try to do at least 1 pitcher of this per week to replace my kid's juice needs. Specially helpful during summer months. The margarita version I save it for 1-2 times per year ;-)

Ooohh...the peanut butter crispy! I just love it! I'm a huge dessert person, but as I've been journaling I know white sugar gives me headaches and sets off all sorts of bad behavior. I found that this dessert which I just made today does not have that effect. I have always known it was an issue, but I wasn't sure how to make such delicious treats with different substitutes. Finding the brown rice syrup was a dream! I am completely satisfied with no ill feelings!
