I'm making these right now, and the dough is incredible! Going to bake them as soon as my sweet potato comes out of the oven.

Just made these cookies. Rolled a few balls and they were falling apart so I threw everything in a pan and made bars. They cut into squares very nicely. Very easy to do. They are definitely sweet. Next time I will put less maple syrup in them or maybe try brown rice syrup.
