2 Questions About Peanut Butter Cups (YUM!)

One of my favourite recipes in the Kind Diet, and the first one I was introduced to, is the peanut butter cups--yum, yum. Absolute yum. Because I'm all on my own I love to share the wealth when I make them--also so I don't eat them all!
I want to try to find a way to make them friendly for those with a gluten intolerance (I'm thinking of 2 colleagues in particular) and was wondering if anyone has any experience with swapping out the graham cracker crumbs for another gluten free option. If you have, I'd love to hear what you used.
Also, I have a really hard time finding maple sugar. I have made the peanut butter cups with regular ol' white sugar, but I'm starting to wonder what other ingredient I could use instead. Does anyone have any suggestions?

I love those peanut butter cups. I never made them with maple sugar cause they are very pricey but instead I've been using coconut palm sugar as an alternative, it's still the same yumminess. You should not have a problem substituting the crackers, I've used Amaranth crackers before. You can also sub the peanut butter for almond or cashew butter too. Hope your colleagues enjoy the treats.
I have never (!) actually made these-knew there would be a bloody overating of them! But I think I might today,as I am stuffed full of quinoa and azuki beans so not in a snacky state.I think toasted quinoa inside would be too much LOL otherwise I'd for it!
I don't use maple sugar, I use brown sugar and they come out great.
i've used sucanat or coconut sugar for the sweetener and i've replaced the graham crackers with crunched up gluten free corn flakes. they were fantastic!! better then the graham cracker i think....
