Quinoa Burritos

These are kind of like the burritos in the book,only BETTER! the quinoa and azuki beans are a delicious combination,much more enticing to your senses than canned refried beans and plain old rice.


you will need :


-one person manning the pan,the other the toppings! or else it get messy and rushed


-Ezekiel sprouted corn tortillas


-fresh quinoa and beans,such as azuki or black bean work best


-fresh avacado or guacamole


-sliced vegetables,such as kale,spinach,peppers,cucumber,zucchini,mushrooms


-olive oil and lemon


Heat a cast iron skillet and place each tortilla,one by one heating the tortillas until slightly toasted.Hand one by one to the toppings delegated person,who fills the tortillas. Lasatlty, give each torilla inside a squeeze of lemon on top.It makes it perfect!


I had these for lunch today and for several days consecutively last week.So good!

I have a ceramic stovetop and am not supposed to use cast iron on it. Do you have any other recomendations for cookware?
