Hi, I've been flirting with the concept of veganism for about a year, and I got TKD for Christmas. Today I cooked my whole family (parents, husbands, siblings and my five year old twins) a vegan lunch, everyone loved it! I made the collard greens with pine nuts and raisins, from the book, but used spinach because I don't know what collard greens are. I assume I can grow some?
I have been scoping out various foods for a while, Havelock North New World stocks some Linda McCartney products ('meat' pie anyone?) and the British food shop in Petone has great vegetarian things too, although I think some of them are Quorn, which has an egg product in it. I was super excited to get burdock in our local korean store recently, and we served it for Christmas. I used to eat it all the time when I lived in Japan, and missed it so much. My family was really impressed by it as well.
My kids are really small and skinny (they were quite prem) and I was quite horrified when the nutritionist/dietician at the hospital told me to fatten my son up with load of full fat dairy, cheese and butter. Surely all that saturated fat is not healthy. I wish I could get him to eat nuts.
Oh, I'm in Wellington by the way. This is my first post, but I'm hoping posting here often will help me stay on track and become vegan.
