My husband and I, both vegan are hosting family for Christmas this year. I'm tired of making the one thing that seems to please everyone, pasta. However, the people coming over don't like mushrooms, beans, spinach, peppers, cucumbers, olives, anything else out of the "ordinary" and there is a dietary restriction requiring a gluten-free, low carb, no sugar option. Help! Any ideas on how to make this a nice sit down dinner people will like?
What about a nut loaf with the usual roast veggies and vegan gravy? There are a few recipes out there you could try??? I made my first nut roast this weekend and liked it, though I want to try a few other versions as I would want to tweak this one. It would be good for a cold climate as it's very filling.
