Vegetarian Toddler advice

How do I get started? My husband and I are giong vegan, I'd like for my toddler twins to be vegetarian. I also have a 5 year old who has multiple food allergies, including soy and many beans, so he will be "flirting" for a while.
I'm especially looking for easy kid (picky toddler!)friendly healthy vegetarian meals. Thanks!!!
I should also add, that the twins are 16 months, and just weaned a week ago. They drink coconut or hemp milk due to my older son's allergies, but are not dairy allergic.
Try How it all Vegan by Sarah Kramer. Its got tons of recipies, and a whole section about making kid-friendly vegan meals and snacks. It's also got tons of treats and deserts for sweet-toothed monsters.
Have lots of veggies and fruits available to them, dried fruit and nuts as well!

Be sure you try all the veggies and fruits on your kids. My daughter loves kale and broccoli, any way shape and form, I can't keep the stuff around, it just disappears. She even takes it to school for snacks to share with the kids. I am the mom that has to bring the veggie platter to all the potlucks they have and she gets them all excited about it, talking it up days beforehand.
Avacado was a real lifesaver for us. My daughter will eat avacado (doesn't matter how it's prepared) when all else fails.
I also include her when preparing, whenever she helps with the prep, she is more willing to chow down. Even if all she does is wash her hands and sprinkle the salt on.
