NYT Vegan Pies

I made the pumpkin pie on this Website for Thanksgiving and it got rave reviews. I told everyone about the tofu after they were finished eating and got shock and awe in return followed by, can I have the recipe, even though it has tofu in it?

I made the pumpkin cheesecake pie version from this site and it was great! I crushed up gluten-free, vegan cookies (Josef brand, chocolate flavor) and mixed with a bit of soy margarine to make my own crust. It was really easy to make and very tasty!
