hello everyone!


those of you who´ve been vegan for some time now- do you have some festive classics you would like to share with a newbie? my family is neither vegetarian nor vegan, but accepts my choices, so now I would like to prepare something really good for christmas to make them see what their missing out on.. do you have a favorite recipe that already got some positive responses from omnivores?

i make a vegan lasagna using a tofu ricotta, and from past issues i found (www.peasandthankyou.com) makes best ricotta and i never added meat crumbles but may do that this yr its always a hit and my fam still makes faces before they eat anything of mine lol and then i make this sweet potato casserole (www.ohsheglows.com) and butternut squash and keep the rest pretty plain with all festive vegetable dishes, and my fam still makes a ham n turkey but last yr half of them didnt eat it because they were so full from my lasagna and then all the veg dishes jsut looked to good to pass up, and they were awesome

After reading Kaity`s comment, I would like to add that my wife and I make a vegan lasagna too --- we use oven ready rice lasagna noodles, Daiya cheese, sometimes veggie ground round, and squash or lima beans in it too.

As for holidays Bretzel, try this for dessert --- Choc. Vegan Fudge:

6 tablespoons vegan margarine
3 1/2 cups confectioners' sugar
1/2 cup sifted cocoa powder
1 teaspoon vanilla extract
1/4 cup soy milk......
Directions = Lightly grease a 5x9-inch loaf pan using a little of the margarine. (a very thin candy molding tray is best)

Place the remaining margarine, sugar, cocoa, vanilla and soy milk in a heatproof mixing bowl or the upper part of a double boiler (We use a small pot in a large pot of water).

Place the bowl or boiler over simmering water and stir until smooth.

Pour the mixture quickly into the prepared pan.

Chill thoroughly and cut into squares. Serves: 2 to 3 dozen squares

Preparation time: 15 min. ENJOY

OMG The One and Only!! I am definately going to try this fudge recipe, i love fudge and just havent been able to find a reasonably priced vegan chocolate, so i just don't buy it...but with your recipe, i have all the ingredients already in the pantry!! Thanks!!
