I am new to this lifestyle and am having a hard time figuring out the best way to transition into a vegan lifestyle. I am a Type 1 Diabetic and had an Islet cell transplant done and was told by my doctor that a vegan lifestyle would be the best way to keep my transplant working at it's best for me and in general was just a healthier way to live. I am open to trying anything and have found the local places I can purchase foods and other items but am wondering if there are beginner books or any ideas anyone has on how I can make transitioning into this as easy as possible on me.
I have the kind diet and I google vegan websites and recipes a lot! You'll find a lot of people have created vegan versions of foods we already know and love. :)
I started out with Vegan Living for Dummies - loved it! Also I bought a bunch of vegan cookbooks and started cooking. I recommend for newbies How It All Vegan by Sarah Kramer (lots of basics) and 1,000 Vegan Recipes by Robin Robertson, Vegweb.com has lots of recipes. You could also try giving up one nasty food a week - one week switch dairy milk for almond milk, the next give up something else. Don't beat yourself up if you eat something you shouldn't, just keep going.
