Umeboshi paste...to refrigerate or no?

Hello all,



Just wondering if you guys refrigerate your Ume paste after opening it or if the fermentation is strong enough for it to stay in the cupboard? I am so paranoid about killing enzymes after a few miso incidents gone wrong!

I wondered about this as well so I put it in the fridge after opening - so far, so good. I kept my umebashi plums in the fridge as well after opening but noticed after several months that they started to rot. It's confusing when there is no expiration date on certain products. I'd love to know what others have discovered. Same issue with miso after opening it and putting it in the fridge - how long does it last? Anyone?

With miso you need to defintely refrigerate after opening and I've heard that it can last up to 6 months. Umeboshi and ume paste does not need to be refrigerated after opening (http://www.edenfoods.com/faqs/view.php?categories_id=4#faq87) because of the high sodium content it preserves itself ;)

I considered about this as well so I put it in the refrigerator after starting so far .
