Hi Guys. Happy to be here with others who care in a very special way... Whether the reason for letting go of eating and using animal products is environmental, spiritual, or humanitarian it's all the same to the animals! I'm disabled and find that yummy vegan crock pot soups and nutritious vegan oatmeal based cereals really keep me going when i do not have the energy to "cook" otherwise. Ground flax seeds are a fantastic addition to the day as well... This is my first post - thank you Alicia for creating this great blog! (smile)

Thanks Kate! Exertion makes me ill. That's why I turned to the crock - which serves double duty as storage container. I use all whole and organic ingredients and filtered water. Into the crock go beans that were soaked the night before or lentils or azuki beans, then the usual suspects: onion, celery, and carrot, then whatever was available at local store organic department like brussel sprouts, potato, mushrooms etc. Sea salt, cayenne or black pepper, chopped fresh herb like parsely or cilantro when available, and lot's of cumin and corriaqnder, chili powder, or curry. My secret ingreadient for luscious soup is raisins which i add after the cooking is done - they plump up and do not lose their flavor. Sometimes I put miso in my soup bowl then add the heated portion or sometimes I skip the miso and add tamari and/or glorious dribbles of tahini. Yummy. Soothing. Peaceful.


This week organic oranges were available so am putting zest in my drinking water and brewing the skin in tea. Wa la!
