Ups and Downs

Lately I've been REALLY wanting Kraft Mac & Cheese. The kind in the box. I LOVE mac & cheese and it's the best in my opinion. I haven't had it in over 2 years, since I've been vegan. I've noticed since being vegan that I have ups and downs. I'll go months at a time where I won't even WANT anything non-vegan. But then, for whatever reason, I'll get into a period where the desire is almost too much to take and I'll let myself have a cookie (for example). Or in this case, perhaps some mac & cheese. Does anyone else do this?

Yes every now and then I crave Fettuccini Alfredo :( It was my fav! What I try to do is find a vegan substitute quick. Have you tried the mac cheese recipe on this site that Alicia posted? It's very good. Also Amy's frozen dairy-free mac cheese is a winner too.

Beverly - Thanks! Yes, I have made the mac & cheese from this site before and it was quite good. I'm planning on making it this week. :) I will look for Amy's. I like that company, but haven't seen the mac & cheese product.
Good to hear others have ups and downs and struggles, despite the length of time being vegan. I do think you're right that a vegan substitute needs to be there and QUICK! That's where I fall short sometimes.
Since you mentioned your fav was fettuccini alfredo, do you have a good vegan recipe for that? B/c I have an AWESOME one! It's also one of my all-time favorite foods and probably the vegan meal I make the most often! It's from the cookbook "Quick and Easy Vegan Comfort Food" by Alicia C. Simpson. You could probably get it cheap on Half.com. It's the best vegan cookbook I've found. It's full of recipes for "regular" meals made the vegan way. I highly recommend it! Or if you'd rather, I'd be happy to post the recipe for the alfredo sauce from there for you!

Omg do you have recipe for the afredo? I would lovveee to see it!!!! I'm sure if you post it on your kind life profile others would enjoy it as well ;) I've gotta see that book that you recommended though. Never heard of it and I've been meaning to find a good vegan cookbook that's easy for my "trying to be vegan" dad :D
Whole Foods has a vegan mac and cheese in the box. It is also gluten free, too.
