First Time Travel As A Vegan

My boyfriend and I are driving 15 hours to Colorado for my best friend's wedding at the end of March. I'm transitioning to vegan and we're planning on eating in the car the whole way there instead of stopping at fast food restaurantes. What are some "meals" and snacks that I can pack in the car easily? We will have a small cooler, so fruits and veggies are ok, but is there anything else I could pack?

Hummus and seed crackers (Mary's brand are awesome with hummus). Nuts, dried fruits, peanut butter, wraps, a marinated chickpea salad with lots of veggies in it, larabars, soup or veggie chile in a thermos. The options are endless. Enjoy your trip!

Thank you so much! This helped a lot. I didn't think about bringing hummus and crackers or even a salad. Ahh... It's the simple things that flitter away from the mind.

Instant oatmeal packets (you can get hot water at a gas station mart when you stop to fill up...see if they have hot water for "tea"), granola bars, apples, bagels and peanut butter, quinoa salad in tupperware bowls, roasted veggies in a bowl, and everything everyone else already said. Don't forget utensils and napkins. Have fun!
