Easter potluck dishes?

Is anyone celebrating Easter or passover with a good vegan potluck dish? My family does Easter with Mac and Cheese and Ham. They know I'm vegan - and are supportive - but aren't quite sure how to help me. They are very well-meaning and in the past have made fresh vegetable dishes for me - but put loads of butter on it - not realizing I couldn't have it. So I'd like to bring some dishes that I and others could enjoy. Suggestions?
