I went to a potluck at a local church today and brought the rustic pasta from the kind diet. I added mushrooms and really just eyeballed the portions. I also used red cabbage. I was in a hurry and didn't have the room in the pan for the noodles after the cabbage was added so I just threw the onions,cabbage, celery, garlic, etc. mix in the aluminum pan, threw the noodles on top, threw about half the jar of marinara sauce on top which was a really good organic brand called Muir Glen Organic, mixed it, covered it and flew out the door. I showed up about a hour after everyone had already eaten and when I put it on the table, most of it was gone in about five minutes after I told everyone what it was. It really came out great even though I didn't measure anything. I used more pasta and garlic than what the recipe calls for. I've made it by the book with measurements and it came out really good too. The thing I like about this recipe is that it's good hot or cold. The church has vegan cooking classes every other Tuesday.
