Vegan restaurants in Australia

Its hard to find vegan restaurants outside of major cities in Australia. Where are some good ones in rural Aus? :-)
There is Sunny's in Newcastle, NSW, but it is called something different now, Organic... but Newcastle isn't too rural. I have found that a lot of places are willing to change things for you.

I agree it is hard, I only know of Iku which has lots of restaurants in and around Sydney. when I go out of Sydney I tend to make my own dishes based on the menu, so vegies, avocado, pastas etc
