Corn?

Alicia doesn't mention corn in the book other than in a few recipes... I LOVE corn but is ok to eat all the time? Is it considered a vegetable or a grain?

Corn is considered a starch (Carb) or a vegetable, just like the potato and root vegetables family.


I use to like to eat corn and rice together b/c I'm gluten free. I now keep them separate b/c they both very starchy.

I like to use sprouted corn tortillas when I make burritos or tacos.I think that it's easier on the digestion than corn on the cob,etc.I grew up having delicious Mexican food,and I don't comprehend how people can have whole wheat tortillas in "American Mexican" food.YUCK!

Corn is a grain. I eat it everyday. I used to be afraid of corn because yes it's a carb but now that i'm not afraid of whole grains and eat them at every meal, i'm not afraid of corn anymore. It's natural sweetener. Corn has became my FAVORITe lol
