Am I reading the recipe correctly? 5 cups of vegetable broth and 5 cups of water?? the water addition is listed in the instructions but not the ingredients list. I wonder if it would be bland because there is so much water.
A very late reply, but for anyone else attempting to make this. Unless I did something wrong, the amount of liquid added to this recipe definitely makes it a soup, not a stew. I just finished making it, and while it is not bland, it is certainly not stew! I would suggest cutting it down to 2.5cups of water and 2.5cups of veggie broth to start and adding more as you go if needed. Definitely worth making though, great flavours in this recipe.
Update: once this recipe was put into tupperwear in the fridge and fully cooled it did turn into a stew consistency. But for serving right away it was a soup.
