Since having my 6 months agao daughter, I have been trying my hardest to implement a vegan diet. Her medical issues give me very little time to cook or quickly throw something together (she has reflux and constant issues), so she acts colicky ALL the time. I truly think eating vegan all the time, will help some of her issues and mine, since she is exclusively breastfed.
I usually have no time to cook at all! I will gladly get in the kitchen when given the chance, but most of the time I have to grab chips/cookies/ect .... and I HATE it.
My husband helps when he can, but with working full time and going to school almost full time, leaves me with very little help.
I was thinking about cooking a bunch of meals on Sunday and feezing them for the weeks, but ANY tips as how to stick with a vegan diet would be truly appreciated!!!

Cook for yourself and share with bub. No need make seperate meals.
To start with I'd be stocking my freezer with:
* Soups (soak pieces of a nice heavy bread, and give to your daughter to devour)
* Pasta sauce (with just tomato and vege, or add vege "mince", freeze in single portion serves). Serve with non-egg pasta (wheat, rice or corn).
* Frozen stir-fry veggies. Toss in a wok with sauce, packet noodles, heat and serve (choose a sauce that is not too spicy for your daughter, and be careful of possible allergens, eg peanuts and sesame).
Amazon have soooo many vegan cookbooks, and there are hundreds of vegan cooking blogs with hundreds of thousands of recipes.
* Rissotto is not the best for freezing, but if you made it on Sunday, and ate that night, have some for lunch on Monday, then with the rest of the left overs, you can lightly fry into rissotto "cakes" and freeze them.
