So based on this book (which I am still currently reading) as well as watching Forks Over Knives, I am starting my transition process this week.
Since I just moved back to Atlanta, I know that I will have a lot of value especially from farmer's markets.
I plan to remove things one or two of the major food groups.
I know that sugars and sweets is hard so I'm planning to do that first. I'm not really a big meat eater anyways. So i plan to do that last since I have been eating Gardein and Seitan already.
Anyway else have some feedback in regards to a smooth transition?

Sounds like you have a good plan ... going slowly is a bit easier and eventually your pantry will be converted so just don't replace the dairy or meat once it's gone and start stocking maple syrup and other sweetners if you are trying to cut down your sugar intake. I think reading all the great vegan blogs out there and getting inspiration from their cooking helps too ... also buy yourself some good vegan recipe books like Vegan with a Vengence ... good luck!
Most definitely. I have been feeling great thus far and I am down a few pounds. I just love this new lifestyle. Thanks for encouragement :)
I think transitioning slowly is a good idea. My only advice is that once you do fully commit to cutting certain things out of your diet, try not to fall back into the habit of eating them again. Once I was vegan for three or four months, I put some parmesian cheese on some pasta I made and I was sick for days! Good luck and congrats on making the switch!
