Try goat cheese and pear salad too. Put greens in a serving bowl or divide onto individual salad plates/bowls.Wash, core and slice the pear into ¼ inch slices and add to greens, ¼ pear per serving. Slice or crumble goat cheese and add to greens, about 2-3 oz. per serving. In a separate bowl, whisk together vinegar, mustard and salt, if using. Slowly drizzle in the oil, while whisking to incorporate and emulsify.
