So, when I got home from church today I threw some veggies (red and yellow peppers, butternut squash, purple onion, broccoli, carrots and cawliflower) into the oven with a little olive oil, salt, pepper and white truffle oil. Yum! This evening as I was on my own for dinner I took the leftover veggies and put them in my mini blender with some vanilla almond milk and pureed it all up, then I warmed it up in the microwave. YUM! again!
