Mom is coming to visit...

What do I feed her? She's got many many health problems including diabetes. A whole foods plant based diet would be amazing for her, but I really don't know how all that works with diabetes in the beginning. She's going to be here for 3 weeks but will probably only eat a meal now and then at my house while she's here (she's staying with my sister). Suggestions on what to feed her?

I am really no expert in diabetes but I think that eating veggies will be totally fine!! Wow her with great salads or delicious homemade vegan sauces; I am sure that she will love it!
