Wheat Gluten

I am a new vegan inspired by Alicia's book, and tasted my very first Seitan a few days ago. But now, I just watched a video with Dr. Frank Lippman saying how bad wheat and wheat gluten is for everyone. I'm confused. He said people think they are eating something healthy when they eat gluten and it is terrible for them.

I have a friend who can't eat wheat/gluten but it doesn't affect me.

I have just found the most AMAZING bakery. I was visiting California, I'm from Pennsylvania and came across an advertisement for "The Paleo Bread". I'm doing paleo diet which is very different than Vegan, sorry Alicia although you are my sole inspiration for living healthy and losing weight (got 40 lbs to lose) I cannot go Vegan, at least not right now. I'm actually allergic to wheat and nuts,so there is a big list of things I cannot eat,including seitan and tempeh.I believe you can make it yourself,you know buying the whole soy beans,cooking them,etc,but it seems like a lot of work!
