Going on vacation with the anti-vegan

My new-to-veganism family is going out of town with the ultimate anti-vegans. The husband raises lamb for slaughter. It is his 'specialty' for bbqing for guests. We're going out of town with his family this weekend and I'm in dire need of some quick and easy recipes or amazing packaged meals we can take with us so as not to be the 'annoying and high maintenance' guests. Thoughts?
What about some date/coconut balls for quick snacks .... I even add a spoonful of raw cacao to make them chocolate. There are loads of different recepies if you google but I basically grind up almonds into a meal, pulse in some dates with some vanilla extract, coconut and cacao if you want them chocolate ... then roll into balls and in some more coconut. Healthy and yum.
Maybe do some other baking like muffins or bars for energy snacks that keep well travelling. Otherwise, some trail mix of nuts etc. Oats for breakfast ... if you can cook them or to make overnight oats if you can't?
Some ready made vegan meals ...what about Amy's brand??? I don't really know all the American brands but something like that. I think the visit to Whole Foods is a good idea, they are bound to have what you're after.
If your 'anti-vegan' friends will be trying it ... maybe make sure the recipes don't taste too healthy for people that aren't use to that sort of thing ... indulge in sugar/fat etc so they realise it's not just about salads.
One other thought ... if you know where you'll be travelling, research the restaurants in the area ahead of time in case you're eating out .... most have online menus you can look and you might be able to guide them to restaurants that work for all of you.
