So my wife (not a vegan, but excellent cook) has offered to make me a vegan dinner for Father's Day this year. I found a recipe for this vegan spiced coconut chard and chickpeas with quinoa that I suggested. Unfortunately, she doesn't like chickpeas. And while she still offered to make it for me (she would eat something else), I'd rather have something that the both of us and our 14-month-old twin boys can enjoy together.
Anyone have any suggestions for a delicious, healthy vegan meal that would be seasonal? Our CSA just started and we have a bounty of seasonal deliciousness, including these amazing garlic scapes.
By the way, I've had pretty much everything in the Kind Diet, so I'm looking to branch out a bit here.
