I need to find a salad I can pack for lunch that's a complete meal. Does anyone have any ideas of something simple to put together for an everyday lunch that doesn't require a lot? I have the weekends to cook beans and everything but not during the week, so whatever I can assemble easily is ideal :). Thanks for taking the time out to read this!
I like to make a quinoa bean salad. This can be made the day before and lasts a few days. Cook about 1 cup of quinoa, let cool. Add 1 can of black beans, drained and rinsed, a handful of cherry tomatoes chopped, and some fresh parsley, chopped. Squeeze fresh lime juice over all. I like to mix this salad with a dressing blended in my blender using extra virgin olive oil, clove of garlic (or garlic powder) splash of vinegar of choice, sea salt, and ground black pepper. Mix everything up and enjoy. I like to eat this salad with chopped avocado on top (do that when your ready to eat.) You can change this recipe up depending on what beans or vegetables you have (chick peas, pinto, cucumbers etc.) Enjoy :)
