Altitude cooking help

I live at 10,000 feet and am trying to make an apple upside down cake. the caramel sauce calls for equal parts sugar and butter. The butter and sugar either dont combine or the butter evaporates. by the time the sugar melts its already burnt.


HELP is the altidtude doing something?
