I LOVE ratatouille. It's got a ton of yummy veggies which you can swap about depending on the season, it freezes wonderfully and it's really versatile. I used my leftovers to stuff into peppers and bake with cous cous. So delicious! This is my current recipe, but you can honestly mix and match as you like!
1 leek
1 red onion
1 white onion
2 courgettes (or zucchini, I think?)
1 large tomato
1 tin of chopped tomatoes
Fresh chives
Fresh basil
Dried herbes de Provence
Garlic to taste
Chop everything to bite sized pieces (except for the leeks, which you should slice thinly). Add a splash of oil to a frying pan and soften the onions, then add them to a large pot with the herbs and chopped tomatoes on a low heat. Then fry off all of the other veggies, adding them to the pot when they're done. Let the big pot simmer for about 20 minutes, then it's ready to serve!
Great over pasta, with cous cous, or even on it's own! Also, if you change the herbs a bit, this makes a great base for a mexican veg chilli with rice, beans and sweet potato. Om nom nom.
