Making Meals All in One Day.

What is your simple (because I'm on a very tight budget), one dish wonders that I can make one day and reheat the rest of the week? I have a pretty needy infant and she leaves me very little time to cook anything from scratch on the weekdays:-)


Also any easy snacks? I'm breast feeding, so I'm always wanting to snack on anything!!

I like making up fresh hummous and having that to snack on with celery/carrot sticks for snacks ... or date/almond balls for when I want something sweetish that's also healthy, put some raw cocao powder in it for a choc twist. They are so easy to make and handy to have on hand.


What about a veggie chilli bowl or veggie curry? They would keep pretty well. You could make the base and then all you would need to do would be to steam some brown rice or make a salad or something like that?

I think the Polenta Casserole in the book is a good meal to make on Sunday and use for the week. If your baby is old enough you can even puree it for a meal for her as well!

Carrot dip is great!

Just blend up a bunch of carrots with garlic and olive oil...mmmmmmm
