You may simply not be getting enough calories to satisfy your hunger. That happens to me some times. To make sure that I stay satiated, I make sure that I eat and add healthy fats to my food (think avocado, seeds, flax oil, etc.) and if I don't really feel like eating but am hungry, I'll opt for a green smoothie.

Green juices are goods and I drink them a lot too, but they're not as filling as drinking a smoothie where you get more calories. On the days I start with a green smoothie, I find that I'm fuller for longer.

Hyperglycemia can also cause hunger (I'm a type 1 diabetic) and because you say you feel this way after you eat this may very well be the case. The only way to know for sure is to test your blood sugar. One difference is that with hypoglycemia you will feel extremely shaky, sweaty and may not be able to think straight. The cure for this of course is to eat less carbs (no more than 30-45 grams per meal) and increase your protein intake. This is a bit of a challenge being a vegan. I in the flirting stage and am looking for tips from anyone else that is diabetic in here.
