Hello! I'm going to try this! My only fear is that 1) I'm not a great cook 2) i'm not really familiar with some of the meat substitutes. I have tried cooking Tofu once and it was a disaster! Any suggestions?

I was a hopeless cook too but I've found that my cooking has gotten so much better since I went vegan and I'm actually enjoying cooking too, which was a surprise. I think it's because you find all these new foods that you've never tried before and it's sort of fun experimenting and then some things you do just have to cook yourself if you want them because they don't yet make vegan versions in the shops.

Re tofu and meat substitues ... don't worry so much about thinking of having to replace 'meat' .... I haven't cooked tofu yet and I've been vegan for 10 months, so it's possible to be happy without it, that said I don't mind it and would like to experiment more with tofu. I have tried tempeh and liked it and will try it again with different recipes but I am mainly happy using loads of veggies/beans/grains and turning them into curries or something filling and tasty like that ... after a while you might start thinking of them as the star of the meal instead. They are my every day items anyhow. Have fun!
