Going Vegan with mah-jor allergies and food sensitvities

Hi Everyone! So, here's the deal: I'm allergic to so many food items that it makes it hard to be absolute vegan. They are all confirmed allergies or sensitvities. No nuts, melons, kiwi, strawberries, quinoa, oats, wheat, and so on and so on. Additionally, I have GERD. I eat tofu and have made various recipes, but, is there anyone out there who shares my experience and is willing to share ideas??

PS I'm extremely thin in nature and can't afford to lose weight.

I noticed you didn't mention beans or seeds (like sesame, pumpkin or sunflower). Also, do some research to see if there is a protein powder out there that you can add to some shakes for extra calories & protein. Vega One is gluten, dairy & soy-free. Get a sample-sized pack & try 1/4 of it in a smoothie to see how your body reacts to it over a week. The container lists these for its protein: pea protein, sancha inchi protein, hemp seed protein, sprouted whole grain brown rice protein. Hope this helps....
