Not that most of us can afford to regularly vacation in Aspen, but if you do, Pyramid Bistro is a MUST. Hands down one of the best vegan restaurant meals of my life. They have one or two menu items with fish, chicken or cheese, but when we told the waiter we were vegan, he said he'd point out the non-vegan items, because it was much faster that way. For those with a sweet-tooth, there were probably half a dozen non-dairy desserts. Did I mention everything was fresh, local and delicious?
