Miso Soup for One

Hi Alicia,

I'm trying to incorporate as much of the superhero foods as possible into my diet. I love miso soup and really like your idea, as you wrote in your book, of having it for breakfast. I wondered if miso soup is something that can be kept in the fridge for a few days, maybe even as long as a week, and re-heated when needed? Or would this ruin some of its magic? I ask because I am single and live alone, and so when I make a big pot (on the weekend when I have some time on my hands) I can only eat so much. And when I feel like having some for breakfast on a weekday, I usually just don't feel like making the time to get up extra early since I'm already so pressed for sleep time.

So my questions are: (1) How long can miso soup keep in the fridge and how should it be re-heated? (2) Any tips/tricks for making a quicker miso soup fresh in the morning?

Thank you!

Nick

miso is a live food it's not good to keep and doesn't taste the same reheated. I think it would take just as long to reheat as it does to heat it the first time. For me it only takes like 3 min to make miso soup. I put hot water out of faucet in small pot and put the paste in and smash and stur it mean while stove on med high. Put tje pot on stove and bout 2 min it's steeping hot (not boiling).
