wow... just wow.
i made these beauties for the first time tonight, and they are the most fluffiest, delicious pancakes you could ever wish for. All those years i was making pancakes with eggs and milk, I wish i had known you do not need them at all! You will not regret these pancakes, such a quick, simple and delicious recipe!
Ingredients (serves 2)
1 cup flour (whichever kind you prefer)
1 tablespoon sugar (I used brown sugar and agave syrup)
2 tablespoons baking powder
1/8 teaspoon salt
1 cup soymilk
2 tablespoons vegetable oil
Set the element with a pan to a medium heat
Combine dry ingredients; be sure to use two tablespoons for the baking powder
add soymilk and oil to the mix and mix it all up
cook the pancakes as per usual - wait till bubbles form in the middle of pancake and flip
wrap the pancakes up in a clean tea towel while you cook the rest to keep them warm and soft
