Oh my gosh- these are a hit every single time I make them!! There are so many recipes from the book that are fantastic but this one outshines them all in terms of being popular across the board with Kind lifers and regular eaters alike!!! :) LOVE these!!!

I made a whole Kind meal for my non-vegan family last weekend and these cups for dessert...they are still raving about them! Making them again for an upcoming Christmas potluck. They are so delicious!

Hi Kind Lifers! I'm Julie Swartout here. Today was my very first day of making the Chocolate Peanutbutter Cups!!! I'm gluten free so I used corn chex. I also used less 'Earth Balance' dairy free butter. I used half earth balance and half almond milk. I mixed 'Silk Amond Milk' into the chocolate chips for melting.
I felt so excited to make the recipe. When I was actually scooping and measuring the peanut butter I actually felt my SELF CONFIDENCE was INCREASING!!! Since I've created those healthy homemade vegan dessert cups I feel like a greater person with more joy and relief/stamana. Those peanut butter cups make me feel so WHOLE and DELIGHFUL!!! I feel so pure from the fact that I'm eating peanut butter and chocolate in a way that's actually wonderful for my body, mind, heart and soul. This recipe was one of the reasons I purchased the book, 'Kind Diet'. I'd so LOVE to take these peanutbutter and chocolate delights with me when I travel. They would totally lift my spirit when I'm feeling exhausted from traveling. Being vegan is quite a task when flying or traveling for hours. It's like the second main idea aside from reaching your destination.
Lately, I've been a SOUL SEARCHER, searching for grace, kindness, natural peacefull qualities in life that we're suppose to expierence in everyday life. Well, I kind find those qualites in those chocolate peanutbutter cups. When I refer to the term 'Soul Searcher' it's about those natural, blissful emotions that we're naturally suppose to expierence in living a natural life. You know, the simple art of 'searching for one's true self', like truly discovering who you really are and what makes you just so happy in life. To me soul searching is: Searching for inspriation or receiving a revelation of insight from a higher power. Well, I'm a Christian so I'm always seeking inspriation and kindness through the Holy Spirit. The chocolate peanutbutter cups have totally empowered me! I feel stronger, more confident, I know that I have peace within my soul and honor from my heart simply because I'm indulging into earth's goodness. Chocolate and Peanut butter, two natural foods that cause impowerment and bliss within people.
Well, my delighful and delicious chocolate peanut butter cups are chilling in the fridge right now.

Julie -- any more wonderful advice for gluten free/vegan goodness? I am new to vegan, 2 months (easier for me than my family!) I have a daughter with nut allergy and another who is GF. Needless to say AUGHHHHHH! While I can eat veggies at every meal, getting my 7, 12, and 14 year old daughters to do the same is another thing altogether! I love that you used corn chex in this recipe. I was excited to try the peanut butter cups, found out my daughter may be GI and my heart sank...

Do you have any good pancake and sandwich bread flour recipes or alternatives?
