how to make vegan recipes out of a few ingredients?!?!

i really want to eat healthier and i want to try out some vegan recipes...i have no idea what to make though, as i hardly eat fruit/vegetables at all! (unless you count potatoes lol) i dont have a lot of ingredients to cook with (due to financial reasons my church has been donating us food and im unable to actually go grocery shopping at the moment) but these are the things i have to work with: carrots, tomatoes, potatoes, corn, green beans, white beans, peas, apricots, apple, apple sauce, lettuce, peanut butter, oatmeal, granola....along with all i have all kinds of pasta ,and lots of different spices. I also have lots of things to bake with (like whole wheat flour , baking soda, etc) I'm not sure what i can make out of all this though! Can anyone please give me an idea of something to make with what i have?

How about ...

Breakfast - porridge cooked with a banana (it is really sweet and delicious) and served with two walnuts or some flaxseed meal on top or chia if you have it and if you need milk, try some almond milk. You can also make almond milk yourself if you have a food processor.

Dinner - veggie chilli or a thai red or green curry if you have any coconut milk, lots of indian curries .... all of those are really filling with lots of flavour and you can throw lots of veggies in and serve with brown rice or tacos etc .... or a white bean sauce over some pasta with veggies tossed in, cous cous and veggies with fresh corriander and chilli sauce or veggie burgers.

Snacks - raw coconut almond date balls, a teaspoon of peanut butter with your favourite fruit or celery or something like that, home made hummous with celery sticks

Desserts - endless possibilites ... just google google google.

For Breakfast, you can make the oatmeal with water and cut up an apple and add that with a sprinkle of cinnamon. If you have a crock pot or use a soup pot on the stove you can make a Minestrone-type soup for Lunch or dinner. Add cut up carrots, cut tomatoes or a can of diced tomatoes in juice, a cut up potato, green beans, the white beans, if you have brown rice or whole grain pasta, you can add that, and a can of vegetable broth and some water. If using the crock pot cook on Low for 6-8 hours until the white beans(if dry beans) are soft and tender. This should give you some leftovers for a lunch or dinner for another day. Hiope this helps a little. :)

Make a burrito bowl. Rice, beans, fresh tomato salsa (chopped tomatoes and onions with a squeeze of lemon and a bit of salt), finely chopped lettuce. A dash of hot sauce and you're set. A hearty meal.

I made this dish tonight:

2 med sweet potatoes 2 inch pieces
1 onion-diced
1 cup of lentils
1 qt veggie stock
1 tblspoon curry powder
pinch of salt

All in the crock pot-4 hours.
Done.
