Calling all teachers

Yesterday I was fortunate enough to see Alicia's hilarious play "the Performers" in New York and meet with her afterwards. I was talking to her about how, as a college professor, I always show my classes Paul McCartney's video "If Slaughterhouses Had Glass Walls, Everyone Would Be Vegetarian" and how many students actually do become vegetarians because of that. It occurred to me this morning that we, as teachers, do have the ability to educate our students about the way to eat healthy by adopting a vegan diet.

As a trauma/critical care nurse for 23 years, I fully appreciate the risks of a meat-rich diet. It is much harder to treat obese people in the ER and in surgery, not to mention that it is much more difficult to lift them onto gurneys and into helicopters. And that is just the beginning, as you can imagine.

So I think it is entirely appropriate for us to teach our students to eat vegan and maintain lifelong optimal health. Let's all campaign to do so!
