An easy meal for two

Hi everyone! I want to get 'The Kind Diet' book, I hear its filled with recipes. But until then I'm still taking baby-steps to just eating kinder in general. My husband will eat pretty much whatever I make for dinner, even though he still eats a lot of meat. So I'm looking for advice on something yummy, for two, with a not-so-big grocery budget. Thanks!
Hi Bee ... what about mexican .. I think it's always popular and very filling with lots of beans and nice sides. He won't even miss the meat/dairy. Though you should probably explore lots of different vegan blogs ... Post Punk Kitchen, Oh She Glows, Little House of Veggies, etc are all great ...good luck!
Oh wow, thank you Kirsty! I'll look into some new recipes and see what I find. I hadn't really thought to get into veggie blogs - thanks for the advice (and blog list!)
No worries ... if you want any more blog suggestions, just let me know!! I know you've got it on your list but definitely read TKD too when you can as apart from great recipes it has so much advice that in the beginning (and even still for me) I find so handy, it's also really good for motivation. : )
I love field roast vegan italian sausages (they make other sausages, hotdogs, roasts, but these are my fav.)
They are a little spendy, so I cut them up and add them to other things, like rice and beans.
or saute' them, add peppersand pinions , swisschard, and your fav. tomato sauce. Put it on your favorite toasted bread and sprinkly with daiya mozzerella. Yumm!
I also chop them up, and add them to a homemade vegan pizza, or to sauce for pasta and veggies.
Tofu scrambles are also yumm (and cheap). I am sure you can find recipes for those all over online. Cook with your favorite veggies, and spices, wrap in a tortilla, or on whole grain toast...delish!
Lentil soup is also great! This is my one of my fav. recipe, but there are lots depending on your tastes.
