Yesterday was my first day of eating Vegan. Much of what I ate yesterday was delish; fresh foods and grains, however my concern is I will gain weight rather than lose. I was so used to not eating carbs, really I would limit them. My diet consisted of eating protein "meat" and veggies/mixed greens at every meal and occasionally a sweet potato.

I will keep a food log for a month. Hopefully this helps? Any suggestions or recommendations would be helpful!

I had the same concerns but I haven't gained but lost. As long as you are eating healthy grains and having your meals primarily vegetables you should be fine. I do notice I gain a couple pounds once I eat a big plate of spaghetti but I drop it quickly ( I weigh myself everyday). Keep up the good work and everything will be great! Good luck!

Make sure you eat enough protein as I found I lost weight rather than gained! Really explore grains not just substitutes. Yesterday I had a middle eastern dish with lentils and rice. Try to add sea vegetables. I like to wrap leftovers in sheets of nori as Alicia suggests. I made a quinoa nut loaf with mushrooms for christmas and turned the leftovers into little 'sausage' rolls. Once you get the hang of it, it's awesome and you'll feel amazing.
