I am interested in trying a vegan diet. I have been a vegetarian before are rarely cook with meat now. Luckily, I love veggies, legumes, nuts, fruits, and tofu. However, I am concerned about increasing my soy intake-which will definitely happen if I cut out my favorite protein source: eggs. I worry about soy and phytoestrogens. Can someone point me in a good direction to read more about this? If there are good websites, articles, books, or other posts on the forum about this, it would be a great help!
