What to look for when going GF

Recently due to a BAD reaction to an antibiotic, I have found that I may have some sort of UC or crohn's. luckily I have never been bothered by it and controlled with a healthy diet. Anyway, I can not eat nightshades (tomatoes, potatoes, peppers..) dairy, soy and gluten. I have also eliminated all processed foods and sugars (not fruit). I have had to add a little meat since I can't eat beans either, it's my only source of protein
Gluten is the new elimination and I do not eat much of it to begin with, but what hidden ingredients do I need to look out for? I feel that the GF craze has just given the food industry another market to manipulate and make money.
