Hello Sarah, count me in too, i would love to be a buddy. My name is Jennifer and I am from Houston, Texas. I am 90% vegan, 10% vegetarian. We have several restruants here that are totally vegan or vegetarian so thats good. im 10% vegetarian only because of coffee mate and the occasional cheese. I am not addicted to cheese like most people, but sometimes i am just lazy and when my family has cheese lying around with food and im to tired or lazy to cook for my self, it is just easier to have what their having, and sometimes restruants because there is cheese in just about everything and you cant escape it. I have been vegetarian off and on for many years now, but in the last 4 years I have not eaten meat at all and never plan to ever again. i have a step daughter who has also been vegetarian for about the last 2 or 3 years.
Bogette-have you tried Daiya cheese, it is the best cheese that i am come across and its soy free. I love making nachos with this stuff.
MK-for restruants-its a pain but if i know where i am going ahead of time, I just bring my own stuff in little containers. i have eaten bake potatoes this way. i bring my own cheese, butter, sour cream etc in one container and just pile it on. or my own salad stuff because lets face it. a plain salad with just lettuce is no fun lol

Knowledge should always be shared, in my opinion, especially when it is beneficial to health! :) There's a lot of info that the classes will be teaching that I would love to share (not just about health and food directly, but other helpful stuff such as being able to differentiate between sound research and research fueled to sell certain products).
