Giving dinner a whirl

I plan to slowly phase out from meat in dinners to more vegetarian fare. But I imagine like many others, we shop at Walmart or Target for groceries. So when it comes to dinner and available ingredients, just where should I start? I tried *and enjoyed* a vegan mac & cheese this weekend. Even my husband ate it up! He now wants to get on board with slowly incorporating more veggies and fruits and less meat.
So I'm seeking so do-able recipes for "dinner for two". And for my husband, who isn't totally keen on stepping back from meat in every dinner. But he is willing to give it a whirl, so any suggestions?

I can’t cook anything fancy, my family eats simple things. When my husband was transitioning he loved roasted peppers stuffed with quinoa or brown rice and veggies, he also eats a TON of pitas stuffed with falafel, saffron rice, hummus and veggies. I don’t usually cook with any meat substitutes but he also occasionally he wants BBQ so we do seitan or grilled tofu. We eat a lot of soup and chili which is pretty easy to make vegan. My daughter loves to make pizzas with vegan pesto or olive oil and veggies. Pasta and stir-fry are also pretty easy to make vegan.
